Is text-to-SQL accurate enough for production?

With a clean schema and guardrails, yes — for analytical (read-only) use. For writes, keep a human in the loop. The commonly cited '>70% on the BIRD benchmark' is an academic number on a fixed dataset, not a guarantee on your data; we have not reproduced it on any real schema.

Which NL2SQL tools can I self-host?

Only if you enforce a read-only database role and query limits, and block dangerous statements (DROP/DELETE/UPDATE). Never grant the agent write access. Cloud SaaS tools also send your schema (and possibly sample data) to the vendor — self-hosting avoids that.
